Pumpkin cinnamon pancakes
This recipe will have you eat pumpkin on the daily. The perfect breakfast if you ask us. Start your day with your house smelling like a bakery with these delicious pancakes.
You’ll need
For the pancakes
100g pumpkin
190g all-purpose flour
3 ½tsp baking powder
1tbs white sugar
1tbs cinnamon
¼ tsp salt
300ml milk
3tbs butter, melted
1 egg
For the cinnamon butter
100g butter
2tbs white sugar
1tbs cinnamon
Little plastic bag
Serving: 8 small pancakes
Melt the butter. After this, mix the flour, baking powder, salt, sugar and cinnamon together in a big bowl. Make a little well in the centre of your dry mixture and add your melted butter, milk and egg. Mix together until smooth.
Cut your pumpkin and make sure you puree it before adding it to the batter. Mix again until smooth.
Then get started on your cinnamon butter. Mix the butter, sugar and the cinnamon together until it forms a thick and smooth consistency. Transfer the butter to a little plastic (zip-lock) bag and make sure the butter is mostly in one of the corners. Cut off the corner to form your own piping bag.
Add some butter to a pan on medium-high heat and poor a little batter to your pan. You’ll want to get in there with your piping bag soon after, making a swirl of cinnamon butter on the wet batter. After this, you can flip your pancake and let it bake for another minute.

Cinnamon swirl cookies

You’ll need
For the cookies
550g all-purpose flour
180g white sugar
180g brown sugar
250g butter
1tsp salt
1tsp baking powder
1tsp vanilla extract
2 eggs
For the filling
75g butter
2tbs white sugar
1tbs cinnamon
Serving: 25 cookies
Pre-heat your oven on 190° degrees Celsius, with heat from above and below if possible.
Mix together the butter, sugar and cinnamon until it forms a thick and smooth consistency. Divide the mixture in 25 balls and put them on baking paper/a plate. When done, put them in your freezer.
Melt your butter and add the sugar. When mixed together well, add your eggs and vanilla extract. Mix again. Finally, add your flour, salt and baking powder and knead well.
Get your cinnamon butter balls from the freezer. Start forming balls with the cookie dough and place the cinnamon butter in the centre.
Mix some white sugar and cinnamon together in a small bowl and roll the dough through it. Flatten your cookies by pressing on them a bit before putting it on your baking rack. Do this until you have 25 cookies all laid out and ready to go.
Bake your cookies on 190° degrees Celsius for 9-10 minutes and let them cool for about an hour. After that, they’re all yours!
